Poached Pear-LCB

(LCB stands for Le Cordon Bleu where Im currently earning my certificate in Patisserie and Baking.)

Poached Pears- This yummy pear was poached in red wine along with lemons, oranges and cinnamon sticks. It rests atop of a dollop of diplomat cream scattered with brandied cranberries and finally a ring made from phyllo dough flavored with cinnamon and sugar. Freshly made caramel ice cream sit within a sugar cup to balance out the pear slices with dots of raspberry sauce. The final touch is a single pulled sugar straw.

This was the last plated dessert for this part of the block. There were so many elements in making this one dish. Everything was made from scratch. Its been a real pleasure to create these dishes. Im really looking forward to starting up chocolates next week!
